Veronica vacuumed the whole house today, did the last of the straightening, just need to do a last clean up of the kitchen. I'm sitting and enjoying the looks of a neat house. Of course I'll probably mess up part of it before anyone gets here.

The two articles I just read on why not to brine said what Nathaniel did about the loss of flavor in brined turkey. The recommendation I found most interesting was to cook the turkey unbrined. While it rests make a pan sauce from the drippings. Then when you carve it -- cut up the breast meat first and soak it in the pan sauce. You get moist, flavorful meat.

Hey oh, I cooked the turkey this year.
Bout time. The cynic in me says they brine
it so they can sell you a 10 pound turkey
and a pound of water for the price of 11
pounds of turkey. It can keep the turkey a
little moister, but it's water not fat
juices, so it's a less flavorful moisture.
I got an oven baking bag to keep the
juices in instead, worked superb. I
stuffed two peeled and halved oranges,
rosemary, thyme, and garlic inside, and
slathered salt and pepper on thick on the
outside.

if I had to guess about the pre-brining I would say to help keep them longer. This turkey was one of 650+ delivered to work and there was a bit of dust on the top of some of those pallets. It is a fun process to stand out in the cold and hand out turkeys to everyone. Also - just under 11 lbs.

Snow in Bozeman, but that's not really news.
Nathaniel taught me over Thanksgiving that most packaged turkeys are pre-brined. Ask him why he was doing research on that.
